You'll Need: 1/2 cup vegetable oil or melted butter. 3 large eggs. 1 cup milk (*). Baker's Tip: Chilling your cake first makes frosting easier to spread. Find our favorite frosting recipes and inspiration at BakeWith.us/frosting. Directions: 1. Preheat oven to 350 degrees F. Grease bottoms (but not sides) of cake pan(s). For cupcakes, use greased paper liners in pans. 2. Combine oil or melted butter, eggs, and milk and beat with mixer until frothy. Add mix, then beat on medium speed until batter thickens, smooths out, and lightens in color – about 1 minute. Scrape sides of bowl as needed. Pour batter into pan(s); fill cupcake wells half full. 3. Bake according to chart at right. Toothpick inserted into center will come out bare or with moist crumbs. Cool 10 minutes before loosening edges and turning out of pan. Cool completely before frosting. Bake Times: 24 cupcakes: 18-22 minutes. Two 8 Inch Rounds: 28-32 minutes.
