Gluten-Free Cornbread Pudding (Dairy and eggs in recipes can be substituted with appropriate replacers according to your dietary needs.): 1 can whole kernel corn, drained (15.25oz), 1 can cream-style corn (15.25 oz) (gluten free), 1 cup sour cream, 1 cup Nature's Promise Gluten Free Cornbread mix, 1 stick melted butter, 2 eggs, 1 cup cheese (optional). Directions: (1) Preheat oven to 375 degrees F. (2) In large mixing bowl, melt butter. (3) In same bowl, whisk in eggs and sour cream. Stir in drained can of whole kernel corn and entire can of cream-style corn. (4) Stir in cheese and one cup of cornbread mix. (5) Pour mixture into a greased 2 quart casserole dish. Bake for 60 minutes. Top should be slightly browned when done. Directions: (1) Preheat oven to 350 degrees F. (2) Brown beef in skillet. Drain grease. Add envelope of taco mix and water. (3) Turn heat down to low. Add in cooked rice, tomatoes, corn, green chilies and cheese. (4) In separate bowl, prepare cornbread according to package. (5) Pour taco mixture into a 9 inches x 13 inches casserole dish and spread evenly (6) Pour cornbread over top of casserole. Bake for 55-60 minutes. Top with sour cream and cheese.
