Preheat deep fryer to 375 degrees F or heat 2 inches of oil in a large skillet. Mix 1 cup of Don's Chuck Wagon Fish & Chips Batter Mix with 1/2 cold water until smooth. Thaw fish completely. Blot dry, then dip into batter mix. Drop immediately into preheated oil. Cook 3-4 minutes or until done, turning until golden brown. Fish is done when if flakes easily with a fork. Drain on paper towels. Try with zucchini, cauliflower, green peppers, green beans or any of your favorite vegetables. For delicious beer batter fish & chips, substitute your favorite brew in place of water above. Baked Fish: Moisten fish in water, then blot excess. Place in large zipper bag with dry fish & chips mix, 1/4 cup per pound of fish. Shake to coat. Bake in 350 degrees F oven on greased baking dish 15-20 minutes, turning once. Baked Chicken: Moisten chicken in water, then blot excess. Place in large zipper bag with dry fish & chips mix (1/4 cup per pound of meat). Shake to coat. Bake in 400 degrees F oven on greased baking dish for 30 minutes, turn pieces and bake an additional 15 minutes until tender.
