Ployes: For generations the Bouchard Family has been milling a unique light buckwheat flour in order to prepare Ployes (rhymes with 'boys'). A recipe based on the one created by French Acadian Exiles who settled in Northern Maine, Ployes are as elegant as a fine crepe, as hearty as a breakfast pancake and versatile as any bread. Ployes are creating their own identity. From appetizers to main course, to desserts and snacks, Ployes keep finding new ways to make meals interesting. Directions for Authentic French Acadian Ployes: 1. Pre-heat ungreased electric griddle to maximum temp 400 degrees or medium high on stove top. (For best results use electric griddle or non-stick cooking surface). 2. Place 1 cup Ployes mix plus 1 1/3 cup cold water in bowl and beat with a spoon or whisk until all lumps are dissolved. 3. Let mixture set for about 5 minutes. 4. Pour approximately 3 tbsp. of batter on hot surface. With the bottom of the spoon, spread batter out in a circular motion until Ploye is 1/8 inches thick. 5. Cook on one side only for about 1 to 1 1/2 minutes. (If cooking surface is not hot enough the Ployes will stick). For crisper Ployes, leave on griddle for an extra minute. Serving Suggestions: For breakfast - topped with butter and maple syrup. For lunch or dinner - as a flat bread wrapped around your favorite filling. For dessert - stuffed with berries and yogurt or ice cream. With any meal - buttered and rolled. Store in a cool dry place.
