It always reminds us of dishes we've had in Latin America or the Southwest. This dressing is perfect for marinating shrimp, chicken or pork before grilling or searing, or tossed in any salad. Black bean salad: A colorful and delicious black bean salad can be made by tossing together two 15 1/2 oz cans of black beans (drained and rinsed), 1 medium chopped tomato, 1 diced avocado, 1 small chopped yellow bell pepper, 1/4 cup cilantro lime dressing, 1/2 tsp ground cumin and salt & pepper to taste. Makes 6-8 servings. Shake well before using. Refrigerate after opening.
