Safe Handling Instructions: This product was prepared from inspected and passed meat and/or poultry. Some food products may contain bacteria that could cause illness if the product is mishandled or cooked improperly. For your protection, follow these safe handling instructions. Keep refrigerated or frozen. Thaw in refrigerator or microwave. Keep raw meat and poultry separate from other foods. Wash working surfaces (including cutting boards), utensils and hands after touching raw meat or poultry. Cook thoroughly. Keep hot foods hot. Refrigerate leftovers immediately or discard. Cooking Instructions: If frozen, thaw duck in refrigerator 36-48 hours. Preheat oven to 375 degrees F. Remove duck from bag. Remove neck, giblets, and orange sauce. Season to taste. Roast uncovered, breast up, on rack in roasting pan using the following chart: Pre-heated 375 degrees F conventional Oven (Cook 26 min. per pound): 4 lbs. 45 min; 4-1/2 lbs: 2 hrs; 5 lbs: 2 hrs. 10 min. 5-1/2 lbs: 2 hrs. 25 min. 6 lbs: 2 hrs. 35 min. 6-1/2 lbs: 2 hrs. 50 min. 7 lbs: 3 hrs. 5 min. 7-1/2 lbs: 3 hrs. 15 min. Remove from oven when internal temperature reaches 180 degrees F (82 degrees C), measured at the thigh joint. The legs move freely and juices run clear when duck is done. Orange Sauce Heating Instructions: Boil In The Bag: Place unopened Orange Sauce packet into boiling water. Return water to a boil and heat sauce for 6-8 min. Clip the corner of the pouch. Pour sauce over duck and serve. Keep refrigerated or frozen.
