Quick Soak: Sort and rinse peas, boil 10 cups of water. Add 1 lb. (2 1/4 cups) of peas, bring it to boil, and then boil for 2 minutes. Remove from heat, cover with lid and let stand for 1 hour. Drain water and rinse peas. Overnight Soak: Sort and rinse peas. Add 1 lb. (2 1/4 cups) of peas to 6-8 cups water. Let stand overnight or at least 6-8 hours. Drain water and rinse peas. Cooking instructions: 6-8 cups of water or broth 2 1/4 cups of peas bring 6-8 cups of water or broth to boil. Add drained and rinsed peas to the boiling water and reduce heat to simmer. Simmer gently and cover with lid until desired tenderness is reached, about 1 1/2 to 2 hours add salt and pepper to taste. Salt pork, ham, or bacon may be added during cooking for extra flavor. Difference in altitude, hardness of water and product moisture may change the suggested cook time. Peas are an agricultural product. Despite the use of modern cleaning equipment, it is not always possible to remove all foreign materials. Sort, remove foreign materials, and rinse peas before cooking.
