Vegetable Soup: Ingredients: 4 cups Hannaford Reduced Sodium Vegetable Broth. 4 tsp olive oil, 1 medium onion, diced 2 medium carrots, diced 2 medium garlic cloves, finely chopped, 1 celery stalk, diced. 1 bay leaf. 1 pinch dried thyme 2 cups vegetables of your choice (peppers, cabbage, asparagus, mushrooms, or peas 1/4 cup white wine or dry vermouth (optional) 1 pound potatoes, diced kosher salt freshly ground black pepper. Directions: Heat olive oil in a large saucepan or Dutch oven over medium heat until simmering. Add onion and cook until translucent, about 5 minutes. Add carrots and garlic and cook, stirring occasionally, about 2 minutes, add celery, bay leaf, thyme, and any hearty vegetables (such a cabbage). Cook an additional 5 minutes. Add the wine or vermouth and cook until the alcohol has reduced, about 2 minutes. Add broth, potatoes, and quick cooking vegetables (such as asparagus and peas).
